Haisai Philosophy

Set amidst the natural splendors of the Niagara Escarpment, at Haisai we feed you the seasons.

Manager Herman Stadtlander supervises and chef Min Young cooks under the inspirational guidance of legendary chef Michael Statlander. With the Stadtlander family’s philosophy of ethical food, at Haisai you can expect dishes deeply connected to the surrounding bounty of nature.
All our ingredients are locally grown or raised on Eigensinn Farm, foraged from the surrounding countryside or sourced from neighboring organic farms. Our fish is fished from Georgian Bay, in the winter months produce is dug from our own root cellar. The wine list is selected from small vineyard Ontario wineries.
Whether stinging nettle & potato soup, Eigensinn Farm pork Gyoza or wood fired pizza, our dishes are animated by seasonal flavors and textures both familiar and strange.
At Haisai, the process of raising, growing and sourcing, fresh, local and organic ingredients, converting them into fine cuisine and serving it in reasonably priced dishes is our passion.
As unique as the food, so too is the atmosphere of the restaurant. The interior and exterior is constructed and decorated using found and recycled materials. Every stick of furniture is unique and individually constructed by Michael and his friends.
We think Haisai provides a unique meeting place for diners to come and experience the surroundings, eat the seasons and share enjoyment.

Eigensinn Farm

Eigensinn farm is the primary source of ingredients for Haisai dishes in concert with the bounty from the waters and forests of Georgian Bay and the Niagara Escarpment.
Haisai extends Eigensinn farm philosophies and practice of using locally raised and foraged ingredients as much as possible.
